QUALITY GUARANTEE:
We guarantee our salmon through August following the month of purchase.
Literature says salmon can be kept frozen for 6 to 8 months. Our guarantee is longer because the product is vacuum-packed and very high quality.
SHELF LIFE & STORAGE:
Frozen pieces, fillets, portions and steaks keep 2-3 days in refrigerator before cooking including marinating time. Store in vacuum-pouch when thawing.
Smoked salmon keeps a good week in the refrigerator. After one week it is still good to eat but the edges will start to dry out. Keep wrapped in a paper towel, if kept in vacuum pouch fish will become slimy over time.
Ikura keeps 2 days in refrigerator.
THAWING:
All frozen salmon should be thawed in the refrigerator and never in cold water or at room temperature.
To ensure highest quality all our fish are flash frozen and should be thawed as slowly as possible.
The science behind this is ice contracts when it thaws and we do not want the cell walls of the fish to break in the thawing process; this results in drip loss, otherwise known as drying out. The cell walls of your fish are a bit fragile, so you want to freeze fast and thaw slow.
Thaw times for products in refrigerator:
Frozen pieces & fillets: 24 hours
Single serve portions & steaks: 24 hours
Smoked salmon: 24 hours or 2 hours on the counter. (Smoked can be thawed on counter because it is not a raw product.)
Dressed: 2 days on top shelf of refrigerator
Ikura: 24 hours
Wings: 24 hours
